Last night I made a nice, very homestyle dish of chicken and rice with white wine and tomatoes. It was a one-pot meal: cut up a whole chicken, salt and pepper the parts, brown both sides in a big pot, remove chicken, sautee some onions and garlic in the pot, add some rice, sautee for a minute and get it all mixed evenly, add a can of diced tomatoes, white wine and some water, put the chicken back in, stir it all up, simmer until the rice and chicken are both tender. finish with chopped parsley.
i just had some for lunch. it is especially good with Cholula.
